Pumpkin Pie Squares


One of our favorite desserts during the holidays is Pumpkin Pie Squares. This dish is easy to make and says "Utah Thanksgiving" like no other. Well, maybe Pumpkin Cream Cheese rolls equals "Utah Thanksgiving" as well but for today, here we have PP squares. (I must confess, I had a square for breakfast this morning with a glass of cold milk. Perfect!)


Pumpkin Pie Squares

1 yellow cake mix
1/2 cup butter
1 egg
1 tsp. cinnamon
1/2 c. sugar
3 cups canned pumpkin
2 1/2 tsp. pumpkin pie spice
1/2 c. brown sugar
3 eggs
2/3 cups canned evaporated milk
Fresh whipped cream or (shudder!) Cool Whip


Mix the yellow cake mix with the butter and 1 egg. Reserve 1 cup of this mixture. Press remaining mixture in the bottom of a 9 x 13 inch greased pan. Mix remaining ingredients and pour over cake mix crust. Take the reserved cake mix and mix 1 tsp. cinnamon and 1/2 cup sugar, then sprinkle on top. Bake at 350 degrees for 40 to 50 minutes. The top should look set up. Serve with whipped topping of choice.
