My hairdresser, Johnna, (that is used to babysit my kids when they were little) shared with me this amazing switch over the normal Top Ramen salad I had always made. I think the flavors are fabulous!
Top Ramen Salad with Fruit
Diced about a cup of cooked chicken. She uses precooked-chicken tenders or just bakes or boils the chicken. The first time I did it, I used left-over rotisserie chicken from the deli.
Add 1 small can of drained mandarin oranges
3/4 of a cup of seedless grapes, sliced in half.
Put in 1-2 chopped green onions (depending on your taste) and
about 1/2 cup diced celery.
Crumble up one package of Top Ramen (chicken flavored) noodles, reserving flavoring packet.
Mix 1 cup mayonnaise
1/2 cup of milk
the seasoning packet
and stir well.
Stir into chicken mixture.
Add crumbled noodles just at serving. This salad is crunchy and fresh tasting and very, very good! You can adjust many things to taste. Add less mayo if you like, more noodles. You'll love it!
