Since I fell in love with the Brazilian Limeade, I thought I would try another favorite "south of the border" drink. In Mexico, a popular sidewalk drink is this Watermelon Aqua Fresca. David and I both loved it (and of course, I'm just attention deficit enough I couldn't wait for it to chill. ) Delish!
Watermelon Aqua Fresca
8 cups cubed seeded watermelon
1/3 cup sugar, divided
1/4 cup fresh lime juice
1 liter (4 cups) club soda, or seltzer water, well chilled
Lime slices, for garnish
Preparation
1.Combine half the watermelon, half the water and half the sugar in a blender; puree. Repeat with the remaining watermelon, water and sugar. Stir in lime juice. Refrigerate until well chilled, about 4 hours.
2.To serve, stir in club soda (or seltzer) and garnish with lime. (I used Sparkling Key Lime-Smart Sense seltzer I bought at K-Mart)
note: Some recipes include the rind in the blender mix, and then you sieve the pulp. Didn't do that and love how it turned out. I also blended some ice into the drink since I wasn't chilling it. This will definitely be another great summer drink. Next time I'll try agave for sweetness.
