Brazilian Potato Salad
1 package of frozen mixed vegetables- corn, carrots and green beans
3 lg. baking potatoes, peeled and diced into bite-sized chunks
1/2 of a lg. onion, chopped or green onions
handful of chopped cilantro
chopped green olives to taste
2 garlic cloves smashed
1 c. or more mayonnaise
juice from a fresh lime
Salt and pepper to taste
Brazilian Potato Salad

1/2 of a lg. onion, chopped or green onions

Salt and pepper to taste
Blanch frozen mixed vegetables. Cook potatoes until tender. Drain and cool completely. Toss together in a large bowl; then add remaining ingredients to taste. (This will taste like potato salad with a twist.) Chill 1 hour or longer.
