Berty W. brought this hearty pasta salad to Creative Cooking. The recipe says that it makes 2 servings but that would only be correct if you were an Amazon.
Pasta Salad with Salami and Mozzarella
2 cups gemellie (or some other short pasta), cooked drained and rinsed under cold water
2 cups chopped spinach
1 cup grape tomatoes (halved)
4 ounces fresh mozzarella (cut into pieces) (fresh mozzarella in sold differently than a block of mozzarella cheese. Once you've had fresh, you'll not be the same....)
2 ounces salami (light is okay) cut into pieces
Toss the above ingredients in a bowl.
Whisk together:
3 T. olive oil
1 Tablespoon white wine vinegar
1/2 tsp. kosher salt
1/4 tsp. black pepper
Drizzle the salad with the vinaigrette before serving.
