Makawao Salad


Lisa OOMS (our own Martha Stewart) brought this salad to Creative Cooking. She discovered this delicious salad while dining poolside on the sunny island of Maui. It's name comes from a town located on a rural slope of a nearby volcano. Makawao (Lisa says) is a charming rustic place "up country" where she's guessing even the piniolos (cowboys) like to eat this light but hearty salad!


It is WONDERFUL!



Makawao Salad




2 heads Romaine lettuce

4 grilled chicken breasts (chopped)

2 Navel oranges (bite size pieces....she insists...and I agree, fresh oranges, trimmed of center membrane is a ton better than a can of mandarin oranges but if you must, you must....)

2 avocados (chopped)

8 strips of bacon (cooked and crumbled)

feta cheese

madadamia nuts (chopped) (lightly toast, don't burn!)


wonton strips, cut in squares and deep fried until golden brown


Place lettuce on serving platter. Layer remaining ingredients on top and drizzle with dressing.





Dressing


1/2 cup chopped Maui or other sweet onion

1 clove garlic

2/3 cup sugar

1 tsp. dry mustard

1/4 cup lemon juice

1/3 cup apple cider vinegar

1 T. mayonnaise

1 cup vegetable oil

3 T. papaya seeds (or poppy)


Combine onion, garlic in blender and blend until smooth. Add remaining ingredients except seed and puree until well blended and stir in seeds.


Drizzle over salad before serving.
