Not to be confused with niece Lisa of the Gingerbread caramel fame, but Lisa as in OOMS (Our Own Martha Stewart) Lisa, my wonderful neighbor. Lisa made this salad for our Christmas Relief Society fun bake-off. She had raspberries in the salad as well so the colors are perfect for Christmas but the taste is year-round. When I recently made it, I just had blackberries (divine!) and the berries and the pistachios are really a good twist.
Lisa's Berry Salad Dressing
1 cup mayo
1 cup vegetable oil
3/4 c sugar
3/4 cup red wine vinegar
1/3 cup diced red onion
2 tsp dried mustard
2 tsp poppy seeds
1 tsp salt
dash of pepper
Mix & Chill
Salad ingredients
1 head red leaf
1 head iceberg
feta cheese
1 package blackberries
1 package raspberries
pistachios (Lisa purchases big bags of shelled pistachios at Walmart and I was happy to find them at Winnco in the bulk section.)
You can always add another berry like strawberries or pomegranate if you want
