Chicken Crunch Salad

Funny Kathy made this great salad at our last Bucket.  I loved it even though it had the "W" ingredient in it.  (you know me and cankers and the "W" word!)


Chicken Crunch Salad

3 lbs. chicken tenders, cooked and diced into bite-size pieces
1 1/2 dried cranberries
1 1/2 cup chopped walnuts
2 cups apples, peeled and cubed
salt and pepper to taste
1 head hearts of Romaine

Combine the tenders cranberries, walnuts and apples.  Toss with desired amount of Red Onion Vinaigrette.  Salt and pepper to taste.

Rinse and dry lettuce hearts.  Place in refrigerator to crisp.  Serve as lettuce wraps or salad on the lettuce leaves.

Red Onion Vinaigrette

1 medium red onion
1 cup sugar
1 cup vegetable oil
2 tsp. dry mustard
2 cups red wine  vinegar
1/2 tsp Kosher salt
1/2 tsp. coarse pepper

Place ingredient's in blender, blend and chill.
