Kale Salad


This is the salad that Sheron served for our Bucket lunch.  We laughed when she told us that you needed to "massage" the kale before combining.  Never heard of such a crazy thing!  But the salad is delicious- and doesn't require any oil so it is uber healthy.  Enjoy your massage!


Kale Salad

1 large bunch of organic kale (peel leaves off stems and discard stems)
1 bag brocolli slaw
1/2 cup raw sunflower seeds
1/2 cup chopped raw walnuts
1/2 cup dried cranberries

Dressing
1/2 cup fresh orange juice
Zest from one orange
1/4 cup rice vinegar
3 T. pure maple syrup
Salt & pepper

Massage the kale leaves gently in a little of the dressing.  Then toss with all other ingredients and the rest of the dressing.  Marinate for at least 4 hours, in covered glass container in the fridge.  Keeps well in fridge for up to 4 days.
