Veggies in a Cloud

I made this vegetable dish for our Bon Appetit dinner the other night.  I loved it.  I thought it needed a little salt and pepper which I would sprinkle on the vegetables before spooning on "the cloud."  It was so good I ate it for breakfast this morning.  That good!

Veggies in a Cloud

2 T. butter
1 cup chopped onions
3-4 cups cut broccoli
6-8 carrots, cut into julienned strips
1 8-oz. can sliced water chestnuts, drained
1 cup heavy cream
1/2 cup grated Cheddar cheese
1/2 mayonnaise
1/4 cup Parmesan cheese


Before, the veggies.  Below after the cloud melts into them.  Yum!



Saute onion in butter in a small skillet.  Cook the veggies, in a small amount of water until crisp-tender (about 5 minutes.)  Layer the vegetables, onions and water chestnuts in a 2-quart baking dish.  Preheat oven to 350 degrees.  Whip cream in a medium-size bowl.  Fold cheeses and mayonnaise into cream and spread on top of the vegetables.  Baked uncovered for 30-40 minutes.
