Crab Ceviche
If you are on the look-out for a new appetizer, and haven't tried ceviche yet, this is the dish for you. It actually can be made with imitation crab, canned crab and I love to add shrimp. If you are making ahead, don't add avocados and tomatoes until just before serving. It would work as a salad on a bed of greens. A friend from Chile told me they serve it there with popcorn on top! This is a must for our Lake Powell trips.
Crab Ceviche (add shrimp if you like)
1 lb. imitation crab meat (shrimp is good added in as well)
10-12 limes (or bottled juice equivalent) (I used 1/2 and 1/2)
Pour freshly squeezed lime over crab meat and let marinate at least
15 minutes
Add:
2 avocados, cut up
1 med onion, chopped ( didn't do, I just like the green onions)
½ bunch green onions (mostly green part)
1 cup frozen corn
4-5 tomatoes chopped (add just before serving)
salt and pepper and
garlic salt to taste
Serve with wheat thins or chips
