Southwestern Cobb salad with Lime Cilantro Dressing

Debbie Stowell made a wonderful southwestern cobb salad for Creative Cooking....I didn't have my camera for pictures but she arranged it in sections much like the BBQ chicken salad (above)  I make.  The thing that I loved (besides it being pretty to look at) was the unique dressing- Lime Cilantro Dressing.  Here's the recipe for the salad (remember it isn't the same salad as above) and the delicious sweet-tart dressing.

Southwestern Cobb salad with Lime Cilantro Dressing

1 1/3 cup chopped cooked chicken (if desired)
mixed with 2 tsp. taco seasoning

Chopped romaine lettuce
1 15-oz. can corn, drained
2 small avocados
1 15-oz. can black beans, rinsed and drained
1 cup shredded cheddar cheese
1 red bell pepper, chopped
small can shopped olives
chopped tomatoes
salsa

Arrange lettuce on plate.  drizzle salsa across lettuce.  Place strips across plate of each of the ingredients.  Top with the dressing.

Lime Cilantro Dressing

1 6-oz. container lime-flavored yogurt
1/4 cup ranch dressing
2 T. chopped cilantro
1 T. lime juice

Mix ingredients well,  Drizzle over salad and serve.
