Honey Lime Chicken Salad with Tomatoes and Avocado


BFF Cathy served this at the last Bucket luncheon she hosted and it was/is a new favorite. Cathy's daughter made this for the surprise party as well. Try it! Delish!



Honey Lime Chicken Salad with Tomatoes and Avocado



Marinade:

3 T. fresh lime juice

3 T. vegetable oil

1 T. honey (typically Erica uses more)

1/2 tsp kosher salt

1/2 tsp. garlic salt

1/4 tsp. fresh ground pepper



4 chicken breasts (6-8 oz. each)



2 ripe avocados

1 T. fresh lime juice

1 pint cherry tomatoes, cut in half

2 T. minced fresh chives



Make the marinade by combing those ingredients in a small bowl. Whisk until the honey is dissolved.



Place chicken and marinade in a ziploc bag for 1-2 hours prior to cooking.



Grill chicken and let rest for 2-3 minutes prior to cutting into bite-size pieces.



Cut avocado into chunks and toss with lime juice. Add chicken, tomatoes and chives and mix well and serve. (note: Erica likes to make extra marinade to use as additional dressing for the salad.)
