This recipe is Brandi's friend, Lizzie's, and it is as good as it looks. Of course, I can't look at a recipe without giving it my own twist.
Asparagus Parmesan
3 lb. fresh asparagus
1 T. grated Parmesan cheese
1/4 tsp. garlic powder
1 cup dry breadcrumbs (I used crushed stuffing mix and omitted spices except salt)
2 T. milk
1/2 c. salad oil
1/2 c. flour
1 egg
1 tsp. salt
pepper
Beat egg and milk together in a shallow dish. Mix the cheese and spices and breadcrumbs in a bowl. Heat oil in a skillet. Dip the asparagus stalks in flour, then egg mixture, then the cheese/breadcrumbs mixture. Saute in oil 10 minutes or until tender.
