We made these yummy cookies for Heidi's cooking birthday party. They are a winner!
Chocolate Rollo Cookies
2 1/2-2 3/4 cup flour (enough that dough is not sticky)
3/4 cup cocoa (I used less- 1/3 to 1/2 was plenty)
1 tsp baking soda
1 cup white sugar
1 cup brown sugar
1 cup softened butter
2 tsp vanilla
2 eggs
48 Rollo candies
Beat sugars and margarine until fluffy. Add eggs and vanilla and beat well. Add flour mixture, blending well. Cover and cool dough in refrigerator for about 1/2 hour.
Shape rough into 1 inch balls around the caramel, covering it completely Bake 8 minutes at 350 degrees. Do not over bake...they will look quite soft. (while the cookies are baking is the time to start taking wrappers off of the candy.) Cool cookies in pan slightly then move to waxed paper to continue to cool. Drizzle melted white chocolate over the top or sprinkle powdered sugar over (this is what I did) or eat them as is. Delish!
Note: I made these cookies two ways. The first way was to put them in miniature cupcake pans. The cookies then come out cup shaped. I also just put the balls on a baking sheet so the cookies came out flat. Both were great with that caramel in the middle.
