Poppy Seed Chicken

The topping on this chicken is so divine! The buttery crackers and crunch of the poppyseeds gives it a great texture. This is one of our family's favorites! (Thanks, Brandi!)

Poppy Seed Chicken

Frozen chicken breasts/tenders (enough to fill a 9 x 13 pan)
1 pint sour cream
2 cans cream of chicken soup
3/4-1 1/2 sticks butter (I use just one stick)
1-2 sleeves Ritz crackers ( usually use 1 and 1/2 sleeves)
1-2 T. poppy seeds

Preheat oven to 350 degrees. Place frozen chicken in 9 x 13 pan. Mix sour cream and soup in a bowl. Stir with a whisk and pour over chicken. In a separate bowl, melt butter and crush sleeves of crackers. Combine with butter and poppy seeds. Sprinkle over top. Cook for 1 hour.
