Lime Fruit Dip
1/3 cup sugar
2 eggs
4 teas. cornstarch
1 can (6 oz) frozen limeade concentrate
1 cup whipping cream
2 Tbs. sugar
2 drops green food coloring
In the top of a double boiler, combine beaten eggs, add sugar, cornstarch & limeade. Cook until thickened, stirring often. Remove from the heat & stir in the food coloring. Set aside until cool.
Add 2 Tbs. of sugar to the whipping cream before whipping it. Fold whipping cream into cooled limeade mixture. Serve with fresh fruit.
Note: Dip may be frozen or kept in the refrigerator up to 2 weeks
