Chili's Queso Dip

I love Chili's Queso dip so I was happy to find the recipe (seeing as how my mom does have 200 cookbooks plus!)

Chili's Queso Dip

1 16-ounce box Velveeta Cheese

1 15-ounce can Hormel Chili (non-beans, Not Chunky)

1 cup milk

1-4 tsp. chili powder (start out with less, add more to taste)

2 tsp. paprika

1 T. lime juice

1/2 tsp. ground cayenne pepper

1/2 tsp. ground cumin

Cut the Velveeta into cubes. Combine the cheese with the remaining ingredients in a medium saucepan over medium heat. Stir frequently until cheese melts, then reduce heat and simmer for 20 minutes. Serve hot with tortilla chips for dipping.

(I like to put my chips into a brown bag and put in a warm oven for a few minutes to release the oils. Of course, I also, in college, put my underwear in a brown paper bag to finish drying. They came out a melted blob. The worst part is that I thought in theory it should have worked. So I again tried it, only for less time. Did I mention I am a blonde? I hope your chips turn out better than my undies.....)

  1. you sound just like my friend who wanted to put the tupperware in oven, I said it will melt and she said not if I put it on low like 200` I tried to convince her, but she wasn't getting it so I let her do it and guess what it melted :-) Love the recipes
